So this is completely made up. Wanted to try and make something with the cauliflower in my fridge (I bought two) before it went bad. So I went back and forth on what to make and finally ended up settling on my own invention. I wanted something with a little more flavor and I LOVE Indian so Indian Cauliflower Bake was born
If you are on Grace and Strength this is a Phase 2 safe food!
Indian Cauliflower Bake

Serves: 1
3.5 oz Cauliflower, chopped
3.5 oz Cottage Cheese, non-fat
1 Tb Milk
1/2 tsp curry powder
1/2 tsp cumin
1 Grissini breadstick chopped.
Preheat oven to 375. Put cauliflower in microwave safe bowl with a little water and cook for 1 minute 30 seconds. Meanwhile mix cottage cheese and milk. Drain cauliflower and add to cottage cheese mixture. Stir in the curry and cumin. Put in baking dish and then sprinkle with the grissini breadstick pieces.
Bake for 13 minutes. Broil for 4 more minutes to nicely crisp up the top. Take out and let rest for about 5 to 10 minutes minutes and then enjoy. This is still a tad liquidy but the longer is sits the more it seemed to come together
